This raw Greek Bioactive Forest Honey is from hives in wild Oak and Chestnut Forests on Mount Kissavos, a Natura 2000 Reserve, on the east side of Thessaly which faces Mount Olympus. it’s a dark, deep tasting treacly tree honey with a high rating of Active 25.
This honey comes from the trees and mountain floral, including many herbs, like Oregano and Camomile. The main source is the Oak trees that grow on the slopes of Mount Kissavos along with Chestnut and some Fir. Honeys that predominantly come from these trees tend to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content.
Chaga (Inonotus obliquus) has a long history of traditional use across Northern and Eastern European cultures. In this infusion, Chaga is carefully prepared and slowly combined with the honey, allowing its naturally occurring compounds, including polysaccharides and polyphenols, to infuse gently over time. This process is designed to complement the honey without overpowering its natural taste.
The result is a smooth, malty honey with subtle earthy notes, offering a balanced fusion of sweetness and depth. It can be enjoyed by the spoonful, stirred into warm (not hot) drinks, or used as a functional addition to everyday foods.
